By 1900 Huntley and Palmer, the British firm of biscuit makers, were selling some 400 varieties of biscuits, many of which would have contained chocolate. Despite senior partner George Palmer being an active campaigner against slavery, it would have been very hard for any of the large-scale manufacturers of the Georgian and Victorian age to have avoided commercial involvement in the slave trade. In fact, the reality is that some of todayâs chocolate-making practices are still shrouded under a dubious cloak of forced labour, human trafficking and wretched conditions. Still today, stories break involving one of the big chocolate players linked to child slavery, poverty or complications with damaging environmental issues: too many, in fact, to mention here.
Huntley and Palmer launched a special chocolate range between 1930 and 1939, which included a selection of wafers: the chocolate finger wafer, the chocolate Ascot filled wafer and the summer wafer.
I discovered this rather unique chocolate wafer roll recipe, which mostly seems to contain whipped cream, while having the audacity to suggest being served with more whipped cream.
Chocolate Wafer Roll
30 wide chocolate wafers
1-pint whipping cream Maraschino cherries
Whip cream stiff, and spread a layer on a wafer. Cover with another wafer and cover this with another layer of whipped cream. Repeat until all the wafers are used, but be careful to keep the roll straight. Cover all sides of the roll with the rest of the cream and decorate with the Maraschino cherries.
Place in the ice box for several hours. To cut, place the roll on its side and make diagonal slices. Served with more whipped cream, if desired.22
